Terroir

Our Merlot's slowly ripen on our chalky-clay plateau, similar to those found in Saint-Emilion.

Variety

100% Merlot

Vinification

Mechanical harvest with berry selection. De-stemming and crushing before vatting. Alcoholic fermentation to a temperature of 25° to 28° degrees with daily pump-overs. Three weeks maceration and selection of the best tanks of Merlot.

Tasting notes & food pairing

Concentrated red colour with darker purple highlights. Intense and fresh nose with red fruit and spicy smells. Mouth is supple, lasts long on the palate and offers a fruity aftertaste. This delicious fruity wine is delightfully young. Taste this wine between 16°C and 18°C with red meats or poultry.

Terroir

Grown on our most beautiful chalky-clay hillsides, our Cabernets are powerful and complementary to our fruity Merlots.

Varieties

50% Merlot, 30% Cabernet Sauvignon, 20% Cabernet franc

Vinification

Mechanical harvest with berry selection. Fermentation to a temperature of 25° to 28° with daily pump-overs. Skin maceration during three weeks and selection of the best tanks. French oak barrel ageing during 18 months before blending.

Tasting notes & food pairing

Intense red-garnet colour. Complex nose with vanilla and fresh fruity notes. Long barrel ageing makes the tannins soft and the wine round, red fruit aromas flourish in the mouth. Taste this wine between 16°C and 18°C with full-flavoured meats such as game, duck breast, or strong cheeses.

Terroir

A limestone-clayey plateau, close to the Dordogne river, perfect for Sauvignon blanc expression.

Varieties

60% Sauvignon Blanc, 30% Sémillon, 10% Muscadelle

Vinification

Machine harvesting in the cool, early morning. Selection of the berries. Skin contact maceration during 10 to 12 hours for the Sémillon. Low temperature fermentation from 14°C to 18°C to enhance aromas. Ageing on fine lees in thermo-regulated stainless steel vats during few weeks.

Tasting notes & food pairing

Bright yellow-green color. Fresh and fruity nose with broom and citrus touches.The freshness enables the flavours to last from the beginning until the end of the tasting. Very balanced result with delicate grapefruit and lemon tastes.Taste this wine between 8°C and 10°C with oysters or grilled fish.

Machine harvesting in the cool, early morning. Skin contact maceration during 12 hours. Low temperature fermentation from 12°C to 16°C to enhance aromas. Ageing on fine lees in thermo-regulated stainless steel vats during few weeks.

Tasting notes & food pairing

Beautiful pale yellow with green highlights. Upon smelling, one finds all the finesse of Semillon with its fresh and fruity aromas. The mouth is lively and presents a good balance with an interesting length of aromas. Taste this wine between 10°C and 12°C during aperitif, with oysters or grilled fish.

A set of limestone-clayey plots which permits a slow and steady maturation of grapes.

Variety

100% Sémillon

Vinification

Machine harvesting in the cool, early morning. Selection of the berries. Skin contact maceration and fermentation from 12°C to 16°C. Six months of ageing in oak barrel and is stirred once a week to put the lees into suspension to produce a more complex and aromatic wine.

Tasting notes & food pairing

Brilliant soft yellow colour. Elegant nose with white fresh fruits blended with tertiary and toasty touches. The mouth is complex, presents a good balance, then a long and rich finish. Taste this wine between 11°C and 13°C, as an aperitif, with foie gras, white meat, and most cheeses.

Terroir

Our Merlot's slowly ripen on our chalky-clay plateau, similar to those found in Saint-Emilion.

Variety

100% Merlot

Vinification

Machine harvesting in the cool, early morning. Selection of the berries. Partial bleeding of Merlot tanks (between 10 and 15%). Racking and low temperature fermentation to preserve aromas. Vatting during a few weeks before bottling.

Tasting notes & food pairing

 Intense pink color. Elegant nose with ripe strawberry aromas and a touch of blackcurrant buds. The mouth is voluptuous, puissant, well-balanced by a good acidity. Fresh fruits coat the mouth for an impressive result. Taste this wine between 8°C and 10°C during aperitifs and summer evenings with good simple dishes such as mixed salads.

The grapes are handpicked and fermented in vat as white or rosé wines. Traditional second fermentation (champagnisation) in bottle before the disgorging process.
